Beers from La Brasserie de Montmirail

The permanents:

- CerviraBilis Blonde is a full-bodied, hoppy Pale Ale.

Refreshing and delicious as an aperitif with cured meats, it also goes very well with sauerkraut or raclette.

Alc. 5%/vol.

- CerviraBilis Ambrée is a Red Irish-style ale. 

Brewed with a blend of five malts, including rye malt, which gives a spicy flavour.

To be enjoyed with blue cheeses (Stilton) or dry cheeses (Parmesan, aged Comté) or beef stew (marmite Sarthoise). 

Alc. 5%/vol.

 - CerviraBilis Blanche is a wheat and barley malt beer with citrus fruit, ginger and coriander notes

Lightly hopped, it's very refreshing beer.

Alc. 5%/vol.

Temporary beers:

- CerviraBilis India Pale Ale (IPA) is a relatively dry and very hoppy pale ale. The emphasis has been placed on the aromatic aspect of the hops rather than on their bitterness. 

Mosaic and #09326 experimental hops for aroma and HBC 682 for bitterness are at the heart of this beer. The yeast is Verdant IPA. 

This IPA goes perfectly with a BBQ sirloin steak or BBQ merguez & chipolata. 

Alc. 6.5% /vol.

- CerviraBilis wheat with blackcurrant is a very fruity, refreshing beer. It is unsweetened as the fruits being added during secondary fermentation.

This beer goes well with red fruit tart, chocolate or even vanilla ice cream.

Alc. 5% /vol.

- CerviraBilis wheat raspberry beer is fruity and refreshing, but not sweet. The raspberry added during secondary fermentation accounts for 9% of this beer. 

The taste, smell and colour are there, but not the sugar, which has refermented and became alcohol. A pairing with a salmon carpaccio is a perfect match.

This beer was awarded several medals in 2022 and won the silver medal at the international competition in Lyon in 2023.

- CerviraBilis Cocktail is a wheat beer with a very low alcohol content (3.5%). It can be drunk chilled or in a cocktail such as a SpritzBeer: 3cl of Aperol + the beer.

Alc. 3,5% /vol.

Panem Bilis is a dark, hoppy blond American Pale Ale (APA). It's a beer that recycles unsold traditional baguette. This bread replaces 30% of the malt. 

The hops are HBC 682 and Mandarina Bavaria. The yeast is Fermentis S-33. 

Alc. 4.3 /vol

- CerviraBilis Bissap Season is a hibiscus season beer. Very refreshing, this beer magnifies the hibiscus flower. It is a beer for a hot summer.

Alc. 4.5% /vol.

 - KissTropiStorm is a New England IPA (NEIPA). It is very hoppy, with a strong hop aroma.

You'll find flavours of stone fruit and tropical fruit: apricot, mango and passion fruit. 

The hops are #09326 and Cryo Pop. The yeast is Voss Kviek.

Alc. 5,5% /vol.

 - CerviraBilis Smoked Pear Kviek is a smoked pear beer. 15% of the malt has been smoked with beechwood and green william pears have been added during secondary fermentation.

The smokiness is softened by the pear.

This is a perfect beer to drink with sauerkraut or raclette, but also to enjoy with an old Comté cheese or a light blue cheese.

The making of beer


The beers we make are made with malts, hops and yeasts that we have carefully selected. We have chosen to use a wide range of raw materials from sustainable agriculture. We use 19 different types of malt and 8 different hops for our recipes. We also use 6 different yeasts depending on the style of beer. Too often brewers forget that yeast is just as important, if not more so, than malt or hops. This wide range of ingredients, which some might consider excessive, allows us to constantly offer new beers depending on the season, our discoveries and our customers' tastes. Our beers are neither filtered nor pasteurized, so they are sometimes slightly cloudy. Carbonation is obtained by fermentation in the bottle, which explains the fineness of the bubbles and the deposit at the bottom, which are the natural accumulation of yeast.
